It is a lovely yummy quick meal of mashed plantain, served with boiled eggs and peanuts.
Plantain is one of the staple foods in Ghana..
- 4 fingers slightly riped plantain
- 1 large onion (blended)
- half cup blended pepper
- 100 ml palm oil
- salt to taste
- 2 tablespoons of ginger and garlic paste
- 2 boiled egg
- a handful of roasted peanut
1 Wash and peel the plantains
2 Cut them into pieces and boil in salted water till soft to the middle.
3 place your ginger, garlic and ½ of the onion paste in a mixing bowl.
4 mash the plantain in another bowl or use a food processer.
5 Add the mashed plantain to the ginger, garlic and onion paste. Stir it well.
6 Pour the palm oil into a frying pan and put on medium heat.
7 Add the rest of the onion paste and stir for 10 minutes.
8 Pour the oil onto the mashed plantain and mix well
9 Serve in a plate and garnish with roasted peanuts and boiled egg.
