Swiss Roll

I love swiss rolls because I get to use any filling I desire . My favourite fillings are crashed Oreo in vanilla yogurt, nutella, jam and marmalade. In this recipe we will crash some fresh strawberries and mix it up strawberry jam.. yum yum

Ingredients
100 g (4 oz) plain flour
100 g (4 oz) caster (superfine) sugar
4 eggs
6-8 tbsp of jam (jelly)
Icing sugar for dusting

1cup strawberries (crashed )

Method
Beat the eggs and sugar in a mixing bowl until the mixture becomes very creamy. (15minutes when using an electric mixer)
Sieve the flour into the mixture and fold in till it is well mixed in.
Grease and line a baking pan (34cmx24cm, 9″x13″) with baking paper.

Pour the mixture and level it evenly in the pan.
Bake at 200°C for 10-12 minutes until it is springy to the touch.
Put a large piece of baking paper on your working surface and turn the sponge cake onto it.
Remove the paper from the back of the sponge cake and trim the edges to take away the crust.

Mix the jam and crashed fruit together.

Spread the jam mixture on the sponge cake evenly.
Roll the sponge cake up by using the paper on the working surface to help you.
Trim the ends after rolling and allow to cool.
Dust some icing sugar on the surface.
Serve.
